Glowing Elixir (serves 2)
- 1/2 cup coarsely chopped spinach
- 2/3 cup filtered coconut water
- 1/2 Lebanese cucumber, coarsely chopped
- 1/2 small apple, coarsely chopped
- 1/2 small carrot, coarsely chopped
- 6 fresh mint leaves
- 1/2 small avocado
Blend in a high-speed blender until smooth. Pour into serving glasses or bottles.
