Chia Seeds: Delicious Ways to Include This Superfood in Your Diet

Cindy Kasindorf of Joni Juice Chia Fresca (serves 2)

  • 2 cups water or coconut water
  • 1.5 tablespoons chia seeds
  • 1/4 cup fresh lemon or lime juice
  • 2 teaspoons maple syrup or raw honey

Directions: Add chia and water into a container or large glass and stir well. Let sit for 15 minutes to allow the chia seeds to absorb the water. Stir or shake well.

Blossom Bakery Vegan Peanut Butter Chia Seed Bars (serves 18)

  • 80 grams chia seeds
  • 30 grams coconut oil
  • 140 grams peanut butter
  • 75 grams brown rice flour
  • 45 grams coconut
  • 170 grams brown rice syrup
  • 1/4 teaspoon salt

Directions: Mix all ingredients together with your hands in a large bowl. With a spatula, spread the mixture onto a 1/2-inch sheet pan and freeze for approximately 15 minutes. Cut bars into desired shape/size.
