Snacking is an inevitable part of most of our daily lives and come summer, the temptations can seem endless. Worse yet, you’re probably eating more poorly than you even realize. Forgo calorie-, fat- and sugar-filled frozen drinks and ice creams in favor of one of these ice pop recipes, all of which are made with nutrient-dense ingredients. Who knew you could turn to a frozen treat to get the health benefits of avocado?

Peggy K’s Vegan Fudge Pops (makes 5 ice pops)
- 1 really ripe avocado
- 1 3/4 cups vanilla coconut milk
- 1/4 cup + 1 tablespoon cocoa powder
- 1/2 cup coconut sugar (or maple syrup)
- 2 teaspoons vanilla extract
- 2 teaspoons coconut oil
- 1/2 teaspoon salt
Directions: Scoop out avocado into a food processor. Add remaining ingredients and process until smooth. Pour the filling into ice pop molds. Freeze for 30 minutes, then insert ice pop sticks and continue freezing overnight (or at least 3 hours).
