Vegan Fudge Pops and Other Healthy Ice Pop Recipes

EatPops‘ Kale Pineapple Banana Ice Pop (makes 6 ice pops)

  • 1 cup packed kale leaves (or spinach)
  • 1 1/2 cups chopped pineapple
  • 1 cup chopped pear
  • 1 small banana
  • 1 cup coconut water or almond milk
  • Optional to add: Tablespoon of unsweetened shredded coconut or shot of wheatgrass

Directions: Combine all the ingredients in a blender or food processor and puree. Pour the mixture into ice pop molds and freeze for at least 4 hours (and up to 6 months!). Unmold and serve!
